STUFFED PEPPER HALLOWEEN LANTERNS

Halloween is here...and if you are looking to cook up a savoury recipe to balance out all the sweet stuff that we are likely to consume this weekend, we've got the perfect recipe.

Our Grill Stuffed Halloween Lanterns feature our brand new product, Eatlean Grill - our answer to Halloumi! Eatlean Grill is the perfect replacement for Halloumi in this recipe, containing 40% less fat.
Each of these peppers contain just 155 kcal, 5g of fat, 17g of carbs and 11g of protein. You can get as creative as you want with the fillings, switching up the grains for couscous, rice, quinoa...and using up whatever veg you have in the fridge. The heart of this recipe lies with the deliciously cheesy, salty cubes of melted Grill that feature in every bite - Halloumi fans, we promise you won't be disappointed.

    Ingredients

    • 6 Peppers
    • 150g Courgette
    • 150g Cherry Tomatoes
    • 150g Eatlean Grill, Cubed
    • Chopped Parsley
    • 250g Cooked Grains

    Method

    Take the peppers and carve faces into one side – get as creative as you wish here…just don’t make the holes too big to avoid the filling spilling out.

    Cut around the top of the pepper to form a lid, and then remove the insides of the pepper and discard.

    In a frying pan cook the courgette through, when cooked, add the grains, the tomato, the cubed grill and fresh parsley, and stir well.

    Add the mixture to each of the peppers filling them up to the top, then add the lids and secure if needs be with a cocktail stick

    Add to an ovenproof dish – carved side up and bake for 30-40 mins at 180.
